In the physicochemical study, we measured the pH at a value of (6.65 ± 0.06), viscosity (1.7 ± 0.08), titratable acidity (20.75 ± 1.25 ° D), the dry matter content of a (195.9 ± 46,10g / l) and organic matter (185.70 ± 46,33g / l), and the mineral with a content of (10, 05 ± 1.15 g / l). The analyzes of biochemical study, we are interested we assess the fat content which is (46.02 ± 4,60g / l), the defatted dry matter is (174.27 ± 46,19g / l), this milk is significant in protein values (49,10g/l ± 4,80g/l), confirming its high nutritional value. The values obtained from these various physicochemical and biochemical parameters on Ouled Djellal sheep semi arid areas were comparable to literature data. Ce travail a pour objectif d’évaluer la qualité biochimique du lait cru, nous avons réalisé des études physicochimique et biochimique du lait cru des brebis élevées en milieu steppique alimentée à base des rebuts de dattes. Dans l’étude physicochimique, nous avons mesuré le pH avec une valeur de (6,65±0,06), la viscosité (1,7±0,08), l’acidité titrable (20,75±1,25°D), la matière sèche d’une teneur de (195,9±46,10g/l) et la matière organique de (185,70±46,33g/l), et la matière minérale avec une teneur de (10,05±1,15g/l). Les analyses effectuées sur l’étude biochimique, nous nous somme intéressés d’évaluer la teneur en matière grasse qui est de (46,02±4,60g/l), la matière sèche dégraissé est de (174,27±46,19g/l), ce lait est des valeurs appréciables en protéines (49,10 ± 4,80g/l), confirmant ainsi sa grande valeur nutritionnelle.
