| dc.description.abstract | Yeasts are unicellular fungi that are of great interest in several fields, including food, industry and biotechnology. The objective of the present work is the research and isolation of yeast strains from local forest soil. This research allowed the isolation of six yeast strains, which were then evaluated for their antagonistic activities against contaminants of the genus Penicillium, as well as their amylolytic and proteolytic abilities. The research of antagonistic activity on MYPG medium led to the conclusion that the yeasts tested had no effect on the growth of contaminants. In addition, the amylolytic activity test on PDA medium with 1% soluble starch added revealed the production of extracellular amylases in 4 of the 6 isolates studied. On the other hand, proteolytic activity on skim milk agar medium was developed in one strain only (L1). الخميرة هي فطريات وحيدة الخلية لها أهمية كبيرة في العديد من المجالات ، لا سيما الأغذية والصناعة والتكنولوجيا الحيوية الهدف من هذا العمل هو البحث وعزل سلالات الخميرة من تربة الغابات المحلية سمح هذا البحث بعزل ستة سلالات من الخميرة ، والتي تم تقييمها لاحقا لأنشطتها العدائية ضد ملوثات جنس البنسليوم، بالإضافة إلى قدراتها على التحلل النشائي والتحلل للبروتين أدى البحث عن نشاط المضاد على وسيط MYPG إلى استنتاج مفاده أن الخمائر المختبرة لم يكن لها أي تأثير على نمو الملوثات بالإضافة إلى ذلك ، فإن البحث عن نشاط اميلاز على وسط PDA المضاف إليه النشا القابل للذوبان بنسبة 1%، أظهر إنتاج الأميلاز في 4 عزلات من أصل 6 تمت دراستها. . من ناحية أخرى، تم تطوير نشاط التحلل البروتيني على وسط أجار الحليب الخالي من الدسم فقط في سلالة واحدة ( س1 ) | |
