| dc.description.abstract | Abstract The evaluation of the hygienic quality of fish marketed in the city of Khenchela revealed good freshness for most samples. The microbiological analysis, showed a high level of FTAM which exceeds the Algerian standards and a total absence of faecal coliforms, ASR and pathogenic germs in 100% of the analyzed fish. Pseudomonas putida, Staphylococcus xylosus, Micrococcus sp., Citrobacter koseri, and numerous yeasts and molds were isolated from the flesh of the analyzed fish. This study confirms that rigorous microbiological monitoring is very necessary in order to improve the sanitary quality of fish. ملخص أظهر تقييم الجودة الصحية للأسماك المسوقة في مدينة خنشلة طزاجة جيدة لمعظم العينات من ناحية أخرى، أظهر التحليل الميكروبيولوجي وجود نسبة عالية من FTAM تتجاوز المعايير الجزائرية وغيابًا تامًا للبكتيريا القولونية البرازية وASR والجراثيم المسببة للأمراض في كل عينات الأسماك التي تم تحليلها. تم عزل Pseudomonas putida و Staphylococcus xylosus و Micrococcus sp و Citrobacter koseri والعديد من الخمائر والفطريات من لحم الأسماك التي تم تحليلها تؤكد هذه الدراسة أن المراقبة الميكروبيولوجية الدقيقة ضرورية للغاية من أجل تحسين الجودة الصحية للأسماك. | |
