Abstract
يعتبر الحليب الغذاء الأكثر استهلاكا في الجزائـ
نوعية الحليب تتمثل في قدرته على الحفظ و أن يتحول الى مشتقات جيدة و صحية ولذيذة و ذات قيمة غذائية عالية والهدف من هذه الدراسة هو تقييم الجودة الميكروبيولوجية للاثنين من العلامات التجارية للحليب المبستر منزوع الدسم جزئيا ) Rmila و Athmani) التي تم انتاجهما محليا في منطقة خنشلة. 6 في مجموع العينات من الحليب اتخذت للتحليل الميكروبيولوجي. متوسط التلوث الإجمالي بالفلورة الهوائية المعتدلة تبلغ 233.3 x UFC10 / مل للعلامة التجارية UFC 10 x 4,6 Rmila / مل بالنسبة لحليب Athmani, اما بالنسبة للتلوث بالخمائر تبين ان العلامتين Rmila Athmani ملوثة بالخمائر والعفن مع المتوسط UFC 102 .x50/مل و 26.28 X 10 2 UFC /مل.
كل من العلامات التجارية خالية من الكائنات الحية الدقيقة المسببة للأمراض إلا ان العلامة التجارية (Athmani ملوثة بجنس المكورات العنقودية.

Résumé
Le lait est considéré comme le produit alimentaire le plus consommé en Algérie. La qualité
du lait concerne sa faculté de conservation et son aptitude à être transformer avec un bon
rendement en dérivés sains, savoureux et de haute valeur nutritionnelle.
L’objectif de l’étude consiste à évaluer la qualité microbiologique des deux marques
du lait pasteurisé partiellement écrémé ( Rmila et Athmani) produit localement, dans la région
de Khenchela. Au total 06 échantillons de laits ont été prélevés pour l’analyse microbiologique.
La contamination moyenne de la flore totale est de 233.3x105±76.4x105 UFC/ml 4,6x104±1,5
x104 UFC/ml pour le lait de marque Rmila et Athmani successivement.
D’autre part, les échantillons des deux marques du lait ont une charge considérable en
levures moisissures avec une moyenne de 50x102UFC/ml pour le lait Rmila, et
26,28x102UFC/ml pour le lait de la marque Athmani. Il n’y a pas de différence significative
détecte entre les deux marques du lait. En outre, Les résultats ont montré l’absence totale de tous
microorganismes pathogènes, sauf que le lait Athmani est légèrement contaminé avec le genre
staphylococcus. L’absence de tous microorganismes pathogènes dans tous les échantillons du lait
pasteurisé fabriqué à Khenchela reflète bien le respect des conditions d’hygiène lors de la
production.
Abstract:
Milk is considered the most consumed food in Algeria. The quality of milk concern its
conservation faculty and ability to be transformed with a good yield to healthy, tasty and high
nutritional value derivatives. The objective of the study is to assess the microbiological quality of
the two brands partly skimmed pasteurized milk (Rmila and Athmani) produced locally in
Khenchela. In total, six milk samples were taken for microbiological analysis.
The average contamination of the total flora is 233,3x105UFC / ml and 46.66x103UFC / ml
for both brands (Rmila and Athmani) successively.
The results showed a high number of fungal flora, in all samples with an average
50x102UFC / ml for Rmila milk and 26,28x102UFC / ml for Athmani milk. No significant
difference is detected between the two brands. Both brands are free of pathogenic
microorganisms except the brand Athmani that is contaminated with Staphylococcus genus. The
absence of all pathogens in all samples of both Rmila and Athmani milk reflect the respect of
hygiene practices during production and conservation
