    Évaluation De La Qualité Bactériologique Du Lait Pasteurisé MisSur Le Marché De La Ville De Khenchela.

    ABSTRACT This work consists in evaluating the microbiological quality of pasteurized milk. For this, three samples of pasteurized milk placed on the market of the Wilaya of Khenchela and packaged in sachets, were taken and subjected to microbiological tests. Our results showed the total absence of total mesophilic aerobic flora, total and faecal coliforms, sulphite-reducing Clostridium, yeasts and molds, staphylococci, lactic acid bacteria and salmonella in the three samples analyzed, therefore our results comply with the Algerian standards established by the Algerian official journal ملخص كان الهدف من عملنا هو تقييم الجودة المكروبيولوجية للحليب المبستر والمعبأ في اكياس في ولاية خنشلة . لهذا الغرض تم اخد ثلاث عينات من الحليب واخضاعها لاختبارات مكروبيولوجية. حيث اظهرت نتائجنا الجودة العالية للحليب من حيث الغياب التام ل ,la flore aérobie mésophile totale, les coliformes totaux et fécaux Les Clostridium sulfito-réducteurs, les levures et moisissures, les salmonelles les staphylocoques et les bacteries lactiques في العينات الثلاثة التي تم تحليلها, وبالتالي فان نتائجنا تتوافق مع المعايير الجزائرية الموضوعة من قبل الجريدة الرسمية الجزائرية.
