    Etude de la qualité bactériologique du laitcru de vache

    The aim of our work was to evaluate the microbiological quality of raw cow's milk. For this, five samples of raw cow's milk taken from five cows from five different farms in the region of the wilaya of Khenchela were subjected to a microbiological analysis. The results of the TAMF count for the samples (E3-E4-E5) gave the values (2.10⁴ UFC / ml - 10⁵ UFC / ml - 3.10⁴ UFC / ml) respectively, while for the samples (E1-E2) the results were (1.33.10⁶ UFC / ml - 9.10⁵ UFC / ml) respectively. Our results also showed the absence of fecal coliforms, fecal streptococci, Clostridiums sulfitoreducing agents and Salmonella in the five samples analyzed. In addition, the presence of Staphylococcus aureus in the second sample analyzed. ملخص كان الهدف من عملنا هو تقييم الجودة المكروبيولوجية لحليب البقر الطازج. لهذا الغرض، تم إخضاع خمس عينات من حليب البقر الطازج المأخوذة من خمسة أبقار من خمس مزارع مختلفة في منطقة ولاية خنشلة لتحليل ميكروبيولوجي. أعطت نتائج عد FTAM للعينات (5-4-3) القيم (UFC / ml - 105 UFC / ml - 3.10 UFC / ml 2.104) على التوالي ، بينما بالنسبة للعينات (2-1) كانت النتائج (UFC / ml - 9.105 UFC / ml 1.33.106) على التوالي. أظهرت نتائجنا أيضا عدم وجود streptocoques fécaux،coliformes fécaux ، Clostridiums sulfito-réducteurs و Salmonelles في العينات الخمس التي تم تحليلها بالإضافة إلى ذلك وجود Staphylococcus aureus في العينة الثانية التي تم تحليلها.
