    Étude bibliographique sur l’olivier(Olea europaea L) et l’huile d’olive

    Abstract : The olive tree (Olea europaea L. subsp. Europaea var. Europaea) is one of the oldest species, it occupies an important place in Mediterranean fruit growing. It has many varieties with a significant phenotypic and genetic diversity which has been undervalued to date. In Algeria, the cultivation of the olive tree is of great economic and social importance due to its dominance in terms of area and its use of abundant labor. The quality of olive oil depends mainly on the olive and the extraction process. It is influenced by a number of factors such as: agronomic, climatic (the nature of the variety, nature of the substrate, the stage of ripening of the olives and their geographical origin) and technological (picking, storage of olives, Washing, grinding, kneading, phase separation and oil storage). Our work is a bibliographic study due to hygienic conditions , so we have tried to write the compositions of the fruit (the olive tree), the physicochemical characteristics, and the method of extraction of the oil and its importance الملخص : شجرة الزيتون هي واحدة من أقدم الأنواع ، وتحتل مكانة مهمة في زراعة الفاكهة في منطقة البحر الأبيض المتوسط. لديها العديد من الأصناف ذات التنوع الظاهري والجيني التي تم التقليل من شأنها حتى الآن . تعتبر زراعة الزيتون في الجزائر ذات أهمية اقتصادية واجتماعية كبيرة بسبب هيمنتها من حيث المساحة واستخدامها لليد العاملة الوفيرة. تعتمد جودة زيت الزيتون بشكل أساسي على الزيتون (الفاكهة) وعملية الاستخراج تتأثر بعدد من العوامل مثل: الزراعية ، المناخية (طبيعة التنوع ، طبيعة الركيزة ، مرحلة نضج الزيتون ومنشأها الجغرافي والتكنولوجية (قطف الزيتون ، (تخزينه ، الغسيل ، الطحن ، العجن ، الفصل المرحلي وتخزين الزيت ). عملنا عبارة عن دراسة ببليوغرافية بسبب ظروف صحية لذلك حاولنا تدوين تراكيب الفاكهة (شجرة الزيتون) والخصائص الفيزيائية والكيميائية وطريقة استخلاص الزيت وأهميته.
